You should do the toothpick test BEFORE you take it out of the oven. Also, cut slits on top with a knife so the icing can slither down through the loaf cake, and apply the icing while the cake is still warm.

You need to sift the flour BEFORE you measure it. Otherwise you are using to much flour because it compacts.
