  • Jerk Seasoning makes this dish the MOST flavorful pasta dish out there. It's very adaptable to your needs but also filled with nutrition. If you are sensitive to spicy foods, then simply use less of the jerk seasoning. Not only is this pasta dish creamy, but explodes with flavor all while being dairy-free and completely vegan.
    Make it gluten-free by simply using gluten-free pasta. When using gluten-free pasta, be sure to undercook your pasta a tiny bit. This will help the pasta from becoming mushy.

    Rasta Pasta
    1.5 cup soy curls or tvp
    2 cups boiling water
    1 tablespoon neutral oil
    .5 cup green onion, chopped
    3 peppers, sliced thinly (usually green, red and yellow peppers)
    3 garlic cloves, minced
    1 tablespoon jerk seasoning
    1 teaspoon salt
    .25 cup nutritional yeast
    .75 cup broth
    1 cup coconut milk
    1-2 tablespoons of sour cream per person
    12-16 oz box of pasta, cooked al dente
    1.5 tablespoons salt
    Toppings (optional):
    Parmesan cheese
    Green Onions
    Parsley
    Chili flakes
    Start by prepping all of the vegetables.
    Hint: Save the scraps in a freezer bag and continue to save them (in the freezer) until you have several cups to make a broth.
    Boil water for the pasta. Add the 1.5 tablespoons of salt to the pasta water. When the water is boiling, add the pasta. Follow cooking instructions on the box, however, cook just until al dente.
    Hint: If using gluten-free pasta, be sure to remove the pasta about 2 minutes before it has finished cooking. The pasta will cook longer in the sauce. And every gluten-free person knows that overcooked pasta turns to mush.
    While the pasta is boiling, make the sauce. Heat a large pan and then add the neutral oil. The peppers go in and are cooked on medium heat until they have softened. You can really cook them all the way here or leave them with a bit of a bite, which is how I like them. Then add the onions and garlic. Saute until fragrant.
    Now add the rest of the ingredients to the vegetables. Simmer for several minutes until the sauce thickens. Add the al dente pasta, without the cooking water, and again simmer for a couple of minutes. Top each bowl with a large spoonful of sour cream or just mix about .5 cup of sour cream into the entire dish.
    Important Notes on Jerk Seasoning: If you haven’t had anything flavored with jerk seasoning before, know that it can be extremely spicy. And if you are a person who enjoys mild to medium heat, I would recommend starting with even a couple of teaspoons of the jerk seasoning in the recipe. You can always add a bit more once all of the ingredients have been added and you’ve tasted the sauce.
    Don’t be scared. It’s just seasoning - but you have to learn how much of the seasoning is right for you and your family.
