  • Traditional gnocchi is made with potatoes, wheat, and eggs. This vegan and grain-free recipe ditches the wheat and eggs. Instead it is made with potatoes, garbanzo bean flour, cassava flour, and olive oil; personally I think this version has more flavor. Not only is refined wheat flour lacking in nutrients, it’s also pretty bland.
    The dough is a cinch to put together and easy to work with. There are two ways to form the gnocchi and scribe with the customary lines - both methods produce cute fluffy pasta "pillows." I created this video to demonstrate each method for you.

    * Correction:
