What makes you decided if you use grated 'dry' mozzarella or fresh wet mozzarella? Can you share more about the cheese selection please? P.s I love the raw natural content. No hype, no sensationalism, just honest content. My go to learning source before my Koda arrives
Hi! Thank you so much! I normally use buffalo mozzarella on pizza because it's moist and doesn't burn with the heat from the flames. But in a sizzler pan dish - I could use the buffalo or the grated - whichever one was in my fridge at the time - the drier grated cheese is more protected in the sizzler pan from the flames. I prefer the taste of the buffalo and it doesn't have a strong cooked smell that the grated has!

What temperature was the ooni when you put the pizza rolls in?
Hi. I just got it hot hot - prob about 410c on stone in there to heat up the pan then turned it down to low for the cook.
