I've been freeze drying in my Harvest Right Medium size Pro for the last several weeks. Cooked pork Pork shoulder carnitas, rotisserie chicken, garden veggies and cooked ground beef.
Try your tomato on hamburger. Adds good crunch to it. Also if need tomato paste in a recipe. Make your tomatoes in powder and can use that in replacement of tomato paste.
I'd love to see your storage solution for the freeze dried food! We are currently trying to figure out the best way to do this. So far it's just been put on shelves and in cabinets and that might be the best!

The freeze dried tomatoes last 20 years or more in the pantry if properly stored so mostly we are preserving the summer harvest for later use
