I veganised this using veg broth and vegan cheese and butter and a little nutritional yeast as someone else suggested and it turned out absolutely beautiful. Thank you so much Amy, I'll definitely be having this quite often

Gotta be careful with orzo, it likes to suck up liquid. We made wedding soup once that turned into oatmeal the next day, or so it looked. This recipe works pretty good, so if you never made it before, it should be easy enough. I ate mine the next day for lunch, and it was still tasty.

Swap the chicken broth for a vegetable broth, swap the parmesan cheese for nutritional yeast and find a butter substitute and you will have a great vegan meal with low fat and none of it saturated.

I made it with the Greek version which is called : Kirtharaki and added a chopped zucchini.... Let me just say one thing..... It is really to die for 😍😍😍😍😍😍. Thank you so much for this recepie....and thank you for your warning that the noodles will soak up a lot of water.... I was about to add another cup because it looked like soup....😹 but I trusted you and it came out perfectly 😍

Looks like a nice risotto. :D Commercial mushrooms are not grown in dirt. They're grown in a sterile base. This can simply be brushed off with a vegetable brush or paper towel. Mushrooms are highly absorbent and washing them fills them with water, inhibits the sauteé process, causing them to release a lot of liquid and steam instead of browning. Most traditional chefs like Jaques Pepin always stress never washing mushrooms for this reason. Although more contemporary chefs (and also Julia Child) seem to go back and forth on the issue.
I agree with your mushroom analysis. Lots of people talk of just brushing them off. But still, we are germiphobes and it gives us some relief to get all that sterile stuff off. I know it looks like dirt, but we want it to go away. Perhaps if we let them dry out after washing? I know they soak up water. I thought they browned once they give up the water (after steaming) and then once that water evaporates.
The kind of people who go up an down through TH-cam recipes complaining about perceived lack of hygene are unable to enjoy eating anyway, they don't come to these videos because they like food. They come to make comments and put people on a downer, not only do they hate food, but they hate other people enjoying food and this is the problem for them, complaining about saturated fat, salt, not using disposable gloves, facemasks and, god forbid, dirt on mushrooms, or whatever is just a symptom of that condition
May I ask you two questions ? Is Turkish Orzo equivilant Italian BAGOS (which is readily available where I am in France) ? I have a recepie to add fried Orzo to rice, but after the Bagos, which I used,was lightly fried & turning brown as per directions I found the Bagos pieces still hard and disagreeable in the rice. I wonder if you can help me out. Does both Orzo and or Bagos need to be first boiled like regular rice ?

Please note: If you have small size Orzo, then pasta vs chicken broth ratio is 1cup to 1cup. I've tried your ratio 1pasta to 3broth and orzo has overcooked. This should have been mentioned on your video. just the thought.

I am allergic to dairy as well. No cheeses, sour creams, yogurt, milk, or ice creams for me. I will definitely try this san cheese.
