He inverted the mask and then painted the shadows back in. So instead of having the levels adjustment on the entire photo, you invert the mask to paint the mask back in wherever you want. This is for more natural shadows because it darkens the pixels from the photo rather than, say, painting on top with a paintbrush with one color. You could potentially use the paintbrush method and blend the layer with Multiply as an alternate method. The method in the video is more accurate and maybe faster.
