Yes its very very expensive for a dinner, but if you think about all the work that's been put together, removing loads of garbage, slight renovation, touch up and decorating on the space, transportation of the gear, managing and logistics at this scale... its not an easy/ nor cheap project. For a fine dine + wine, probably at least 2800 to 3500 per person, with all these arrangements and efforts I would say 4800 - 5900 would really be the cost. Definitely crazy price for 95% of HK's population, but for those who can afford it, it's not about the price, It's about the experience and incredible memory, as well as supporting HK's heritage and hidden gem, when even a Westerner care more then the locals. HK locals don't even care or appreciate enough to actually DO Something about it ~!!
I don't believe that the majority of that cost should be put on to the diners/customers. You've picked a location. You're opening up a establishment. You're getting it ready. It's like opening up any restaurant. They're not even paying for water and basically nothing for electricity. I agree its a unique and incredible experience, but for 700 USD it's a little greedy
Controversial opinion but what is Hong Kong's Identity these days? Yes the British rule over HK could not last forever but there is no doubt most of HK's modern history and culture has been shaped by this period, including many of the iconic buildings and events such as the Horse racing, I also suspect that the new powers are not bothered about preservation of HK history, personally, i think the territory will lose appeal for visitors once those remaining fragments of history are hidden behind doors.
