@@19cygnet The texture isn’t the same with fine semolina but it would work. You could try a small batch and see if you like it. Traditionally, these have a slightly grainy texture.
@@MilhaanHome just wondering about one thing. I've always been told that you shouldn't add garlic. In fact it's sacrilegious to put it in this dish! I didn't notice that much different but do you find it improves the flavour?
I think it adds just that little extra something in there! It's not a huge difference, but I like it. Most people add just ginger and it's good like that too. But when you add a hint of garlic, anyone that has it will wonder why yours taste so good! It's our secret!
You could if you don't have normal thalis. Even a shallow bowl (heat-proof off course) would work for dhokla. If you use idli trays, you won't need to cut them. And they will steam quicker as they'll be less thick.
I love dhokla! Sometimes though, mine turn out not so good. Despite using a tea towel on the lid, water still goes on top and one tray will always be ruined. Any ideas?

Oh OK. If you mix the ENO in the whole batch and then steam the second tray, maybe your ENO deflates by that time. I think the baking powder helps with this. Also, it could be that your tea towel is soaked by the second steam. You may need to wring it out or use another fresh one. Try the way I do it. I've tried to give as many tips as possible. They are written on my website too: www.milhaan.com. I learnt by trial and error, and this way always works for me. Let me know if you have any other questions.

One tray comes out stodgy and not fluffy is the best way I can explain it. First tray is almost always ok
