    at what stage do you cut your lemon into slices and salt it? a week before the olives are stored into small jars?

    Please why oak leaves not bay leaves? Also why you soak lemon in salt?
    Will make it like your way as soon as we have olives, thank you.

      Oak leaves are natural antibacterials, so prevent molding. Bay leaves also used for same reason. It is our family recipe, therefore I prefer using traditional ingredients. You can use bay leaves as well. I use lemon slices as barrier between olives and possible air in the jar. Pickling lemons are better for long-term conservation as they are lost their excess juice through this process. Thank you for asking in depth questions 🙏.     Along with the final lemon slice and oak leaves or bay leaves, can we add fresh garlic cloves to the jars or other seasonings?

      Absolutely! Adding garlic, dill, or preferred any herbs enriches the taste of olives. This way you can use them in the cocktails or salads as garnish. In Turkish tradition, cured olive is a part of breakfast, so less seasoning is the most preferred:)

    hi i have made some but filled only half a jar and the top olives started to mould how do you prevent it ? do i have to fill olives and water all the way to the top ? thanks

      Please make sure the jar is full with brine. The olives must submerge into the brine. İf there is not enough olive for filling the jar, place a lid or any other object to let the olives in the brine. Daphne leaves or oak leaves also help to prevent mould.

    Do you have to slit or crack your olives or can you leave them hole.

      If you want to eat within a week, I recommend crack or slit them. For a long-term use leaving as whole is better. When you leave them as whole, they will cured within a month. I always slit a few of them for immediate use, and cure the rest for using along winter😊👍.

      @@gailboelema4654 hello dear, I am so excited that you are willing to try this recipe! Please share with me your experience and the taste of your olives. You can use daphne leaves as well. I used regular lemon. You must wash properly and soak water-1-2 tbsp vinegar mixture to avoid pesticides on the skin.

      Thanks again can I ask what are daphne leaves, I live in Perth Western Australia and haven’t heard of these.
      Can you use by leaves.

      For each 1 liter water add 30 g (1.5 table spoon) of pickling salt. The brine should be just a little salty🤗.

      I live in Perth w.a
      There is a olive farm in a place called Gingin and they allow you to pick olives.
      I have 5 olive trees now so I hope one day mine will fruit.
