    For Lawman's cake I'd open the orange slices expanding between each "wedge" to create a kaleidoscope or stained glass effect (Basically making short ribbons of attached wedges)
    This will take a bit of patience arranging it this way but will display very nicely when done.
    Saw my Grandmother do this for Christmas and Easter back in the 60s.

    When you use a hand mixer, you have to use the right kind of bowls. Use a taller type bowl instead of a wide bowl with a hand mixer. 🎉

    I'll be making that roast pork tomorrow. I took a small roast out to thaw overnight in the fridge today, so it should be ready to cook tomorrow. Nice to see that two hand mixers beat out the usual small appliance winner, KitchenAid today!

    The pork turned out.. It was perfection
    However the orange upside down cake was beyond belief.. I made 3 thinking there would be some left.. But people woke up at night to sip tea talk & eat more cake... I woke to empty pans lol

    Does ATK/Cook's Country have any opinions on whether tieing the roast helps/makes any difference?

      They do often tie roasts up as it makes the shape more uniform for even cooking. But this pork loin roast is fairly uniform to begin with and, together with possibly not wanting to muck up the herb rub added to the outside may be reasons why former Senior Editor Cecelia Jenkins, who developed this recipe for Cook's Country decided not to add that step this time.

    I always double or triple the garlic in a recipe, so this will be 80 garlic clove pork when I make it.

    It is better to leave all the garlic unpeeled and cook it "skin on". This prevents the garlic from burning and it remains moist and creamy.

    KitchenAid also make a 9 speed with coated blades for $79.99, but only saw this on HSN. Personally, I would rather not have that coating entering my food so would opt for a hand mixer without that coating. You know darn well it's going to wear off sooner or later, and then you'll need to get new beaters, and or peel the coating of the existing beaters. Also, Brevel received just 4 stars where all the KitchenAid mixers have 4 1/2 stars! Read the reviews, and price them out for yourself to get what's best for your situation. I was going to buy the 9 speed KitchenAid mixer, but wasn't quick enough, and the wife came home one day with a $25 Hamilton Beach mixer, and it does the job, and has been doing so for a few years now, so?😁👍😎✌

When I do give her a model number of something, and where to get it, she still manages to come home with either something different, or the same brand, but not the model I requested? UHG, 33 years of this has taught me if it's a big deal, order it myself! 🤦‍♂ 😁👍😎✌

    The name of Olney's cookbook is actually "Simple French Food," not "cooking." Sorry not to see Dualit in hand-mixing episode. One of the few with broad rather than wire beaters. I love mine. Lots of bells and whistle on the Breville .... but people complain the silicone on the rubber-coated beaters deteriorates with time ... which means, eventually, you end up eating it ... Hand mixers have a lot of vibrations ... let's see how long those computer-chip controls last ...

    Looks, great, but I don't get it. If this were the chicken with 40 cloves of garlic, of course you would use chicken broth. And I have my homemade chicken stock in the freezer, but I also have vegetable stock. I'd use the vegetable stock in this, only because I don't have pork stock. I see that you can buy it as a concentrate. Why combine the pork with a chicken flavor?

      ATK recipes are typically developed with store-bought broth because that is what is convenient for many home cooks and store-bought chicken broth offers a savoury backbone to many recipes. It's not particularly "chicken"-y so its use in a pork or beef recipe is not going to stand out as such.

    Can't eat that much garlic and be around people a couple hours later. I've put up to 6 cloves into the Greek Chicken and not had any problem, but this much causes some really serious gastro symptoms. I discovered this by having roasted garlic on a baguette. Nasty.

    I love all of your recipes but again, the overly in your face acting and fakeness of the hosts is just so unnecessary. These are seasoned and trained chefs who know what they're doing.
    Having them pretend they dont know a technique or recipe to male it seem more "relatable" is so obnoxious. Please just do normal tutorials

      No, this isn't the type of food that puts weight on. With a better quality oil (Avocado) and staying away from any starches - you will actually lose weight eating this way. Just have a bit of salad with it.
