The scouring of the Shire isn't necessary IMHO. The good guys have won but they will never be the same again. Even if home is still there, you "can't go back again".
Someone else mentioned it in the comments, but I think the film replaced the Scouring of the Shire with something just as poignant and telling for how unhappy the ending actually is. Sure, they saved the shire and their world, but Frodo has been completely damaged by his journey, he can't savor the success, he's scarred for the rest of his life, and both him and Bilbo leaving the Shire to go with the Elves is a great way of showing that the war never ends for some people, and some people don't get a happy ending. I'd still call it a dower ending because the world will never be the same again. The Dwarves and Elves are all gone now, hobbits are still a smaller race, orcs have been wiped off the planet cleanly, and the stage is set for the age of man to begin and become our actual world, since Middle Earth is just our history in the way distant past. The whimsy and happiness of Middle Earth dies not with the Scouring of the Shire, but Frodo leaving with the elves.
One type of adaptation that I think often works very well is movie to musical. Musicals like school of rock and heathers use musical numbers to retell the story in a new, unique way, and some, such as newsies, are just outright better stories than their movie counterparts

For examples of using the blocking of a scene, or whatever it's called, from fellowship of the ring I like the juxtaposition of Gandalf asking frodo to "keep it secret, keep it safe" before going off to do research to when he comes back knowing what the ring is and the camera zooms in on Ian McKellen's frantic face asking "is it secret? Is it safe?" it really draws you into the panic and fear.
I remember the 2020 BBC Dracula series written by Mark Gatiss & Steven Moffat. Gatiss promised a period-set version of Dracula, authentic to the book, with a few new things thrown in. The first episode was brilliant. Very authentic and the new plot points were intriguing and enjoyable. Episode two was great as well. But episode three. My god. It was like an episode of Torchwood. He fell into the sea in a coffin and woke up in the modern day- complete with smartphones, emojis, and some truly dreadful fish-out-of-water comedy. I was so disappointed. If they had just done a decent third episode, it could've been a classic. But three years later, no one's heard of it.
I am shocked at how few views this video has, honestly, I got the slippin Jimmy video in my recommended and enjoyed it, then I got part 3 of this series so I decided to go back to the first part, and the editing is actually really good, much better than I expected from the view count
It's interesting that Cormac McCarthy's work is brought up regarding film adaptations as his novel Blood Meridian is widely considered "unfilmable" for a variety of reasons including that it's just insanely violent even by modern standards.
One thing I love British media for is theri non-standard actors who don't look "Hollywood". It also helps that they have often corssed over to Hollywood to push the envelope on what's considered attractive. (Looking at you, you unconventionally attractive Master of the Mystic Arts.)

The biggest problem I have with adaptations is that they necessarily change the story. Even if literally everything is as close as literally possible, it will be different, as the addition of the elements unique to the new medium necessitate change in audience perception. The problem here is that some people wont acknowledge that. I hate seeing people say that movies are basically just an upgrade to books... complete lack of understanding of mediums and media
Another excellent adaptation both in terms of closeness to the source material and in quality is Holes. It follows the book pretty well and is just a solid movie in general.

The book implies the same revelation as the movie (that Tyler and the narrator are the same person) but the film alters how the information is revealed, and everything that happens afterwards in order to make the ending seem more explosive.

It's Anton demonstrating his power-- over the victim, sure-- but more importantly this is the power he has...as to his contract on Llewellyn, his life as a hitman... he can't control that. I was referring more to a metaphorical meaning the coin toss may represent rather than what Anton meant by it. I 100% believe that Anton only did it as some kinda display of power, but why it was included in the story in the first place is up for debate. If you ask me, if we're talking about the book, what I said is indeed 100% wrong. There, to me, the coin toss represents nothing more than Anton being Anton. The reason I talked in depth about this is because I think the Cohen brothers added a new metaphor to the coin toss in their adaptation. After all, they must have re-written the scene so that Carla doesn't ask for a coin toss for a reason. I think that reason is because they wanted the coin toss to represent risk. Whether you agree with me isn't important because we'll never know what was actually going through their heads unless they hop into this comment thread.
As I said in the comment I made, it seems a lot more relevant to literally everything that is human life than it does to that killer specifically. Reminds me of the book "The dice man." Whether some sicko gives you a choice of a specific coin flip or a specific dice roll as 'a show of power' is irrelevant really, it is still a reflection of how the universe itself does this to us all, all the time... a character who takes on the role of death itself is still a mirror of all life and it's inevitable sequences and conclusions.
But we operate as does the universe. Isn't that the point? We can't always rail against an injustice writ large, or in this case, writ total with our personal sense of justice--because we are always also perpetrating arbitrary injustices as imperfect people.
