I’m making a pastrami at home. The brisket has been in the brine for 6 days now. I’m smoking it for 8 hours tomorrow. It’s a laborious task. People don’t understand that it takes time to make a pastrami sandwich. $30 for a 1/2 lb sandwich is a deal.

This was a cheaper cut of meat way back in the day, Jewish immigrants would come and eat at delis. It's almost like a sign of cultural survival as well as decadence in a sandwich. It's rye bread, deli mustard and pastrami. I couldn't finish my sandwich, it's part of the charm. The next time I brought my wife and we split a sandwich and I was full for the entire day lol
