How blind is she? I’m legally blind but I can see this video with corrective lenses and most people wouldn’t consider me to be stereotypically blind. Is she completely without sight?
No. She is partially blind. Very limited sight

"The T11 category is for athletes with a visual impairment. A T11 athlete may be entirely without sight, or be able to perceive light, but have no ability to see the shape of a hand at any distance. T11 athletes commonly run with guides."
As someone with full vision I don't know how that would be in practice but that is the definition of T11 category from wikipedia.
