It actually takes 2-3 months for them to get to that point. You also need a full spectrum light which we don't have setup at that point. This usually isn't sustainable from indoor due to the fact that you would need 2-3 months in lighting/electricity cranking. Most farmers grow these in a greenhouse or outdoors for that reason (from what I've seen).
I'd be inclined to cut it all on harvest day into your 1oz tubs and then maybe get an extra 1 or 2 1/2oz tubs,and mix the larger and smaller leaves throughout all the tubs
I bet after your 2-3 cuts they would do well planted outside in your garden 🪴 Then in a month or two you could benefit from selling the flowers at market 🌺 or to chefs. Stuffed nasturtium flowers are a fantastic appetizer!
