    Cannot imagine how much work you guys have put in to your potato harvest you guys are doing a great job. Thanks so much for sharing it with us. There’s just two of us living in this household so I don’t need anything close to what you guys are doing. But it still helps me think of little things to make my life easier just in case things get really bad.

    You just solved 2 of my problems! I've put off doing potatoes mainly because i hate the blanching process, so I'm gonna try this.

    We did our potatoes by cutting them up then rinse them thoroughly. Afterwards I sprinkle some fruit fresh lightly and toss them to coat all the pieces. I then place them on the freeze dryer trays, cover with plastic wrap and into the freezer. We start our freeze dryer and let it run till it is below 0 then put them in the freeze dryer. I have re-constituted them and then fried with some onions. They turned out perfect and never any browning while raw.

      Always enjoy a good video on sharing how to preserve our food. I am new to this process so it’s always interesting to me to watch these kind of videos. Plus, I am doing a cooking video once a week on Wednesday. So you’re adding to my collection Of information taking stuff we’ve grown from the garden and trying to preserve it for future meals.       Yes I have! I air fried them. If you leave the skin on, the skin is a bit chewier. I recommend removing skin if you’re planning to do French fries.

    Have you fried any French fries yet using them? I usually cut up potatoes and cover in oil and put in the oven to make fries. I’m wondering if your freeze dried have to go into oil or can be done in the oven?

      I air fry them and they come out just fine. I soak them in water after freeze drying then drain the water really well and oat them dry.

    I would like to try this method, I'm so NOT into blanching! did you try to rehydrate after they sat awhile if so how did they turn out?

      I have rehydrated them. I let them soak to rehydrate because that also removes a lot of the starch, making them crisper if I air fry or fry. Works great.

    If they turn brown during the process is fine because once you cook them the brown color disappears. Its weird but does.
