  • This was our biggest hanging weight yet. 234 lbs. The first pig we turned in was 220 lbs. But come along as we show you what we got out of this 234 lbs hanging weight hog/pig.
    **** OOOOPPPSSS - I forgot to mention in the video that I FORGOT to ask for the fat back. Dumb mistake on my part. But we have a lot in the freezer (like from the 1st pig) to render still, beef fat to render from our steers still, and lots of lard still on the shelf. We should be ok.

    You guys gotta try raising some Meishans. They are a 3000+ yrs old breed! Absolutely incredible. Meishan is also critically endangered. Pork is the most consumed meat in China. They know their pork. They are super gentle pigs and taste amazing.

    We have 9 feeders to process after deer season hopefully our butcher shop is fully operational by then!

    Why no pigs feet or cheeks or snout? Also why no lungs or liver? You can make scrapple with that! What a waste

      You lost me at lungs to be honest. Why didn’t you include the ears? Cooked down until tender and seasoned they make great dumpling, banh mi and spring roll fillings. The same thing with the skin. The skin could have also been boiled and then fried turning it into chicharrones. The liver could have been made Into a pate.
      Cheeks can the cured like bacon or guanciale. The rest of the head can be made into head cheese or just cooked for the dogs and the remaining broth turned into stock.
      Trotters could have been pickled or used for stock and gelatin as well.
      The intestines should have been washed and then salt packed for sausage.
      How about stir fried pig maw or soup?
      When you nitpick you can find dozens of things subjectively wrong.
