Yes, you can move the screw. But you are changing the position of the carving bit. Because the geometry of you machine, the carving depth will always be a half of the model. Anyway, the total depth can be done in two steps. Good work.
actually if you look at the geometry of the machine, the bit depth ( cutting depth) will not necessarily be half of the pin depth, it is the CHANGES in bit depth will always be half of the CHANGES in pin depth. the actual bit depth would depend on the initial depth that the bit was set. for example if the bit was initially set 5mm lower than the pin the cutting depth would be 5mm. if the screw is backed out by 2mm the bit depth/cutting depth would increase by 1mm( half the change in pin change) giving a cutting depth of 6mm.
Geometrically, the arm with the pin and carving bit is a radius which describes an arc of a circle. If you would rise the pin 10 cm, the carving bit will not rise the same height, that is, only around 5 cm. The fact is: because the small angle in carving your work the difference is not significant.
The most important is have protection, use a protective respirator that use filters, that dust will damage your lungs and of everyone around you in the same house, and use protective glasses ses too.

Leonel I think the pin guide is a Phillip head screw - sending it in or backing it out would then be able to adjust the carving depth.
