Maybe some one more familiar with Japanese restaurants can answer this question for me. I been watching this channel for two days now and i see the cooks clean the woks between servings and dump the dirty water/waste behind the burners. Is there some kind of sink/drain/grease trap back there? I see all the water taps along the wall in this kitchen so it makes me think there has to be a drain trough back there. Their food look delicious and those portions would satisfy even my huge apatite. It's a beautiful thing to see people putting such love into their work.

Wholesome family being together and working together. Cant be mad. More impressive. Cause even with my family it one or thee other that cooks for else they'll butt heads. 🤣
    ...
I enjoy watching these cooking hotspots it pit the United states restaurants to shame for the most part because everything has been modernized. To see these skills, Techniques, love, and respect. For the family. For the customers. An for the food. Just cant beat it. If I were compare the pros to more local places like this I'd says the locals are pros. Their not flashy. If I could get deployed again to japan I'd like to see this place. But then id have to rent a translator 🤪🤣 learning another language is difficult.
