Hello there! Those are called "automations," you can right-click on most knobs/sliders in Fl Studio and there will be an option to create an automation clip. Then, you can play around with it which will "automate" that knob however you want it. Hope this helps. Cheers mate

its kind of how in the igor synth, it doesnt just stay the same sound, it changes throughout the note

i doubled checked, and i think some was ripped from the original tracks, and some you can find online (aka what tyler sampled in the first place)
