I just made it, doubled the recipe but it was too watery, idk if my eggs were too big, but it was watery, i added more, now it is breaking. My mixer is having trouble mixing it because it is a lot and it is too small for the industrial mixer. What do i do? Have i wasted icing sugar? Please help!
I'm so sorry about the issue you had with it. Unfortunately, I'm just seeing your message this afternoon. Next time, just split the batch so it's smaller and then add more icing sugar a bit at a time until it firms up, or you can hand-mix on your work table.
@UnapologeticallyMuslimah So sorry about the loss. If it's runny, you don't need more eggs, it's more icing until it forms. A little bit of cmc would have helped, too, just a little so it's doesn't become so hard.

Hello Uzoma, sorry about the experience.
Knead it bits until it all comes together, you can add a little water.
For next time, use cornflour.
