Clams in Spicy Tomato Sauce: A Flavorful Seafood Delight!

    2 lbs. clams
    1/4 cup avocado oil
    2 diced shallots
    2 crushed garlic
    1 red chili diced or 1/2 tsp chili flakes
    1/2 cup chopped chorizo sausage
    2 cups chopped cherry tomatoes
    1/4 cup sun dried tomato
    1 cup dry white wine or vermouth
    1 cup clam broth
    1/2 cup butter
    3 tbsp chopped chives or parsley
    Serve with toasted garlic bread for dipping*
    Place clams in a salad spinner with separator. Add cold water to cover the top of the clams. Let clams sit for 20 minutes. The clams will intake the water and spit out the sand. Drain.
    In a large cast-iron skillet, heat oil on medium heat. Add garlic, shallots, chili flakes and chorizo to sauté, about 2 minutes.
    Add tomatoes and sun dried tomatoes, stir occasionally until tomatoes are soft and release their juices, about 5 minutes.
    Add wine or vermouth, clam broth and butter. Stir to combine.
    Add clams, cover for 6-10 minutes, stir occasionally.
    When clams are open, sprinkle with chive and serve.
