What is wrong in gluten? Last 75 years I hav eating wheat I never had any problem.Gluten is useful in forming glutamic acid in digetion which is useful for improving memory.
It is not so much about what's wrong with gluten but it's about eating variety of millets that are available to us. We are lucky as Indians to have diversity on our plate but we only widely and mainly eat wheat most times.
It gives bit stickyness while kneading so bit easier to roll. Frankly it is not needed if you are making this bhakri daily. If you make occasionally, you may add 50 gm of rice or udad dal in 1 kg jawar while grinding ( just to give little binding while kneading.)

Thanks for sharing the delicious recipe. Just a humble request,it's better not to cook the roti directly on an open gas stove, We inhale the gas through the roti. It's not healthy for our body.
