We certainly assimilate /z/ with /ʃ/. The /z/ in "these shoes" becomes something like /ʒ/: /ðiːʒ ʃuːz/. However we don't normally assimilate /z/ with either /ʧ/ ("these chairs") or /ʤ/ ("these jackets").

In the word 'paper', there are 2 'p' sounds. Which 'p' takes aspiration 'p' = ph?
