Appearance of the seller too matters a lot most of the time they are seen in Baniyan dont they have shirts to put on and give a neat and clean appearance first
12 years in restaurant industry. Trust me, they can't. They just can't work wearing gloves too. Hair caps irritate them after wearing for a few minutes.

He could have used wooden crepe tool. Bare hands dirty , touching dirty scarves, touching food. Leftover batter he puts in bowl then places under shelf. Is he going to use it for next one even though it was heating up on round grill pan ?

It's not at all healthy just see he used the dirty water on the tawa he cleaned his hand in the same water again and again. And spreading the batter with hand is not at all healthy nor so much butter is healthy for anyone.

That’s not only Besan. The daals look like mix of daal such as urad, masoor, split chana dal, moong dal. It’s something like adai in South Indian cuisine.
