Sir I am a typical Lukhnavi lived most on my life in this Shahar -e Lucknow and had Idris Biriyaanni only twice now to savor the very same Pilafs i have been to other outlets by Wahid ,Alamgir and even Tundey Kababi but janaab if you are going to cook Biriyani the way you just did i am sure you are going to make Mr Idris run for his money and fact of the matter is Awadh is actually famous for Pilafs rather than Biriyani its just this fact that for the sake of Convenience that a pilaf came to be known as Biriyani . Bravo. I followed your recipe religiously, although I used lamb instead of mutton as that was the only available option at home that time but trust me it turned out to be a master piece. It reminded me of a biryani that I ate in Karachi at some place near to kharadar or income tax office but I didn’t know the place as I was only a guest. But this was almost the same so awesome. I tried this and it turned out to be really good. Thank you for sharing this recipe. I had some questions if you dont mind my asking - I really wish the recording did not stop :( 1. The milk looks like a lot less than 1 Liter. I used a liter and it ended up with too much yakhni. Did you use a quart of milk or less than a standard quart size of milk? 2. I have a feeling that my milk curdled when i boiled it with the yakhni. Any idea what mistake I could have made? Either it curdled or all the powders that were added to the mild make it look like bits of paneer. Not sure what I did wrong. 3. Eventual final yakhni plus milk should reduce to how much before the dum? Should all the meat be covered by the liquid or should it be much less? 4. When you use green elaichi powder, do you make the powder only from the seeds or do you include the cover as well (the strength reduces)? Thanks again for this wonderful video....

I feel sad when I see experienced chefs presenting Awadhi biriyani and adding pudina & dhaniya. As chefs they should have done more research before presenting any recipe.

my god!!!!its so delicious and subtle the rice just melts in the mouth and the meat cooked perfectly well i have tried biryani before but this is the first time that it was exactly tasted like the restaurant quality dish i used black rock flower in the rice water and also used bay leafs during meat preparation and being a bengali used potatoes also it was the best dish ever prepared by me thank you so much for this great recipe looking forward to try other biryani types soon once again thank you very much

If you use readymade ginger garlic paste it contains vinegar as preservative so milk will curdle.

my god!!!!its so delicious and subtle the rice just melts in the mouth and the meat cooked perfectly well
i have tried biryani before but this is the first time that it was exactly tasted like the restaurant quality dish
i used black rock flower in the rice water and also used bay leafs during meat preparation and being a bengali used potatoes also
it was the best dish ever prepared by me

why did you use Patthar ke fool ?
I am cooking your recipe which will come out good In calcutta Royal indian hotel makes this biriyani ...I would love to have royal muuton chnaap and mutton tikia recipe if you have them.
