Have you ever had chicken fricassee? What's your favorite cajun style dish?

You probably won't see this, although my family makes some good smothered chicken. Im a California dude, although my mom and grandmother in her side are from new Orleans.
It's interesting that I didn't realize that what my grandma cooked was considered Cajun food until I was an adult.
Also, you might want to try this with some pork chops, with some extra dried sage thrown in, over rice. Totally awesome meal, I think you'd love it! And if you spice it up with jalapenos, I recommend adding a bell pepper also, it has a different flavor to it. Although either way it will be good 👍🏿

Thanks so much. Yes, I actually LOVE this with pork chops, and have a recipe for this in my cookbook, "The Spicy Food Lovers' Cookbook".

Nice looking recipe. Went to college in Louisiana and would love it when the campus restaurant served this. Looking forward to making your version.

Looks delicious; gotta add this to my "make" list. I've made your zhug sauce and chicken Vindaloo, both were delicious. I have your hot sauces saved that I wanna make too, especially the Hawaiian chili pepper water 🤤

I’m from New Orleans, born and raised and I grew up my whole life eating this stuff. I think you did a great job. But I do have a local tip. You see all that grease that is floating at the top of the surface? You got to skim that off before you serve it. It’s the same with a gumbo or other dish we have where the oil floats to the top from using a roux. Other than that, pretty good. Oh, and you had the pronunciation almost…it’s pronounced here as freak-ah-say. Bonne chance!

Thanks for the tips, Tito! I've visited New Orleans so many times, have taken cooking classes there and talked to many locals and cooks, and I always learn something. Always appreciated.

I think for me it's either a good Chicken and Sausage gumbo, or Gumbo Z'herbes. I LOVE a good green gumbo! But I'll take it any way I can get it. =)
