Mutton Rogan Josh is a Kashmiri or Persian origin dish ..the Rogan is the other name for gravy and the colour comes from the use of a particular ingredient called "ratan jot" flower or root and hence that gives the colour and name Rogan

of fragrance and color, and mild too, but as far the bong culture goes it has to be deadly Red Chillies ;)

@@nafizaislamkhan6200.. In authentic 'Rogan Josh' tomato puree doesn't go in. The vibrant 'Red' colour comes from Kashmiri red chilly and one kind of a bark (of a plant) called, 'Ratanjot'. Other key ingredients are as the commenter suggested, fennel and dried-ginger powder.
