Tortellini in Brodo: Simple Pasta Recipe | Less than 5 ingredients!

  • Tortellini in Brodo (broth) is a traditional meal from Bologna in Northern Italy. At its core, this is one of the simplest meals to make at home with store purchased ingredients. Simply purchase some good quality Tortellini of your choice, veal is traditional, and also some liquid stock typically beef or chicken. You'll also need some grated cheese like Parmigiana Reggiano or its less expensive, but similar, cousin Grana Padano.
    You could make the tortellini and the broth if you prefer, but we have found this is most of the way there with little expense and effort. You can cook this in the time it takes to cook the tortellini, say 10 minutes.
    For the broth, you can make your own, or if you want to buy it like we do, then I would suggest some high quality liquid stock. Ideally, this type of stock should be clear and grit free. If you were to use powdered stock to make the broth it would most likely be cloudy and a bit gritty in consistency. So we use the liquid stock in This recipe and the one that we purchase happens to be perfect to use as the north for this dish without modifying it. In some cases, you might need to either dilute the stock with water or increase the concentration of the stock to add flavour by reducing the stock by simmering on the stove. Ideally, try and find a stock that is ready to use as the broth.
