I love how she makes EVERYTHING from scratch. I expected her to pull out some vanilla ice cream and soften it for the filling, which definitely has subpar results. Homemade ice cream! Easy and much better!

Agreed on the fondant critiques and I would suggest using a soft filling as it will soften the cookies and make them easier to cut and eat with the soft ice cream. Maybe a cookie butter or of course a buttercream? A homemade marshmallow fondant may taste better than store bought so that's one way to stick with the recipe.

rain _drops you can get fondant at any craft store. The fondant I'm talking about is by Wilton. But you can either purchase fondant or you can make it yourself :)
rain _drops No, she means places like Michael's and Joanne Fabrics. If you don't have any of those stores near you, you can order it on Amazon and www.michaels.com but if you really don't want to pay that much money for ordering/delivery, there are so many excellent recipes online to try 😊

The recipe says 260g of icing sugar or 1 cup. I think it is 2 cups. 1cup is just 130 grams and it is not enough for the recipe (I am making it right now and it needs more sugar.

Your deliciousness just keeps going on and on, I don't know how you keep your figure that I wish you would give me the recipe on that because I need it how to stay skinny and eat and Olsons food! I am going to order your new book and can't wait to get it I should say WEIGHT but you know we only go through life once and I'm not huge overweight or anything like that just trying to lose the last five or so would be nice and I haven't heard any complaints! Besides being a widow and grandmother of four beautiful boys, I don't think anybody is really looking so that's all right if I sneak in extra bite now and then and that's my story it's the truth, and I'm sticking to it! She used the fondant as a filling of the cookie so she could also use the big "cutter" and get the same shape to it as the cookies and the cookies would look more pretty. Nice idea for a photo, but not a good one for taste.
Why cut the cookie into a round shape and waste some dough if you're going to crumble them anyway? Just roll the dough into even thickness and cut them into half!
