You were pretty close, specially with person turning into a wolf. The Dagger is the person, trapped in her own bodie, which was melted to a weapon. Whoever touch that weapon becomes host for it, so when you saw a transformation from person to a wolf it was original body of Naafiri transforming to a wolf, cause they touched the dagger. Host also can resist it's corruption, as you could see that wolves were chasing her in her own mind, but usually that's not lasts for long and hosts are completely suppressed (with some exceptions of course)
Basically the dagger is a Darkin, they are ancient warrirors who gained divine power and immortality trough a ritual using the sun, but went mad after they fought eldrich horrors. After a long war, the warriors were magically sealed in the weapons they used, but even now they have the power to take over the bodies fo anyone who wields them. In this case, a darkin dagger named Naafiri fused with a dog and is now controling the whole pack. PS: Yes there's over 150 champions in league and it has been quite a while since we got a champion who wasn't humanoid.

A darkin blade (which are demon weapons that take over the body of it host over time) controlling a dog and it’s pack is awesome. Also yes Warwick is an existing character in the game. And he’s a man turned werewolf by a scientist named Singed who was Silco drug chemist and Victors mentor in Arcane. Note: If you wanna learn about lore for league check out legends of runterra the card game it gets you to understand the universe very easily
They're not demons and is better to not call them demons to not confuse them with the actual demons lol (Evelynn, Fiddle, Tham...) They're ancient god warrior of shurima who went mad after experiencing so many traumas (like, their leader Azir dying) so "evil" or "corrupted" beings are better titles than "demons"
