I have to say I made those yesterday and they turned out AMAZING!!! I substituted the cream of tartar (cause I was having trouble finding any) with 1/2 teaspoon of lemon juice and I forgot to age the eggs (oops) but they were still the first macaroon recipe that actually worked!! THANK YOU!!

I think i whipped my meringue juuuuust a touch less stiff, didnt use cream of tartar and also mistakenly put all the dry ingredients at once, but i managed to get the figure 8 and they turned ot perfext!! They did need a little longer in the oven and i wasscared theyd be dry and hard but by golly were they absolutely delicious the next day! I made a chocolate-coffee ganache by melting some instant coffee in the heavy cream before pouring it on the chopped chocolate. 11/10, first time making macarons and im still in disbelief at how perfect they turned out. Thank you for your crystal clear recipe!!

Ive made macarons maybe about ten times with ten different recipes and they finally turned out prefect with this one! I've never been able to get feet or a flat top and this time they have both, of course they were delicious too. So thank you for this recipe I wil be using this one forever

This is my second time. I doubled the recipe and they are turning out great. In the past my biggest issue was having hollow shells. Full all the way thru with your directions and recipe. I agree. She whipped the egg whites far too long and didn't properly scrape and mix the batter. She is a good cook though, I just agree that she's missing some technique.
You're right. Her recipe is fine but her macronage technique is way off. It shouldn't take that long to fold the batter and her egg whites were too stiff. However, her final product looked great. I have baked thousands of macarons and don't recommend using the baking mats such as Silpat. I find the bottoms don't crisp as well as they do on parchment.
I thought she macronaged. How else would they have come out so well? Just because her technique was different doesn’t mean it wasn’t there. Maybe watch her other videos and you can see she has a technique.
The first time I tried making these, and the last, the recipe made no sense at all! After all, it never said when to put in the coconut, it wasn’t even listed as an ingredient! I wanted to make Coconut Macroons for a 4th of July party! I now know the difference but haven’t tried to make them since! Thanks for showing the blunders also! I've been trying the French method for two days now.. not turning out as good as the Italian meringue method. I might have to give your method a try. Your mixing is a lot more gentle than what I've been doing so I'll give that a try. Good job on your macs turning out for you.

Hi there! I’ve watched a few of your videos and have found them very useful, however, I am still having trouble with my macarons sticking to the baking parchment or silicone mat. What am I doing wrong? I bake them at 160 Celsius. Should I lower the temp and bake for longer or increase? I also have not been using cream of tartar in my recipe up till now so will that make a difference? Thank you.
I've actually tested this because i was curious, and you don't actually need to let the macarons dry before baking. It was a huge shock to me, but i think you should definitely do a testing video on that.

I’ve made these macarons twice but because the temperature in my oven is never constant, the macarons are hollow. However, I put them in an airtight container with some fresh bread and leave overnight. The moisture in the bread helps to add a softness to the macarons. They do taste great though. I have a question about the ganache recipe. Both times, I used the semi sweet chips, not the wafers, but couldn’t get the ganache to the consistency of peanut butter. I had to add several tablespoons of icing sugar and leave in the fridge for an hour before I could pipe it. Do you have any thoughts on why this happened? Thank you.
Can you do a video of macarons that have flavoured shells? Unless, of course you don't recommend using those flavour concentrates because they don't turn out as yummy as we hoped...
The measurements are a little difficult to follow if someone doesn't have a gram scale. Is this listed somewhere with cup and tbsp measurements? Would love to try this!

Honestly, I guess I'm a bit of a heathen because I don't like them, really (I'm not keen on the texture and I think it's also the almond flour, I hate marzipan and almond paste with a passion, and anything almond flavoured though I like whole or slivered almonds). But the effort and skill that goes into making GOOD macarons is something that I find inspiring.
What do you mean when you say “age the eggs”? I’m a new baker and always like a challenge so I’m starting with one of the most difficult pastries first lol 😂
To age the eggs, just crack and separate the eggs the night before you’re going to use them. Then store the white in the fridge with some plastic wrap on top, and poke a few holes in the plastic. This process of aging the whites will help evaporate some of the water in the eggs and whip to a stronger meringue.

If you sift the dry ingredients on to parchment paper first. Will be less messy and you can put in to bowl after. Just a good tip I learnt.

I'm not sure the technique is the correct one. You missed the macronage. By rotating around like that, the batter won't be incorporated.

You can use pasteurized egg white. It will be flatter, but they turn out really nice. Try it.

Can you use black cocoa powder? Will the lack of fat in the cocoa powder cause a problem?
I recommend macronaging and doing 3 rounds of folding 1 is with 6 rotation 2 is also another 6 rotation and the third and final one is 30 rotations

Hi! It will just take MUCH longer to whip up the eggs into a strong enough meringue. But it’s possible! It’s just faster to use a stand mixer :)

Anum Sohail no need to grease, just make sure you have a layer of parchment paper down or a special macaron baking mat

You cant use pasteurized egg whites because they are low in protein protein is a key part for meringue no protein no meringue 🤷♀️

Honestly, I guess I'm a bit of a heathen because I don't like them, really (I'm not keen on the texture and I think it's also the almond flour, I hate marzipan and almond paste with a passion, and anything almond flavoured though I like whole or slivered almonds). But the effort and skill that goes into making GOOD macarons is something that I find inspiring.
What do you mean when you say “age the eggs”?
I’m a new baker and always like a challenge so I’m starting with one of the most difficult pastries first lol 😂
To age the eggs, just crack and separate the eggs the night before you’re going to use them. Then store the white in the fridge with some plastic wrap on top, and poke a few holes in the plastic. This process of aging the whites will help evaporate some of the water in the eggs and whip to a stronger meringue.
