Chicken and dumplings is one of my favorite things to eat. I boil my chicken thighs, then take the meat off the bone. Then put chicken back into the broth. Season with salt and a little butter. I use canned biscuits to make the dumplings. Take each biscuit and pinch off and drop in hot chicken broth.
Where I come from your dumplings are called Chicken Popeye …. I use self rising flour and drop by spoonfuls into my chicken… I like thick dumplings…. Delicious …. Your way is delicious as well…

My dad had a similar recipe for Christmas and dumplings- named it Popeye. Except used lard and flour and rolled it out. I called it depression food,,back in the depression days I guess! He had a shaker bottle of hot peppers,filled with vinegar and shook that into our bowl! All very 😌satisfying.

That didn't look like 3 tables spoons of shortening because when I used 3 it was much bigger plus if you use too much you can taste the shortening that's not a good idea. I'd rather taste a flour dumplings. Well it looks good dumplings are thin. Yes I know everyone has Thier own way of making them. CHICKEN & BROTH • 1 - Whole Chicken (I used a Purdue Young Chicken 4.5 pounds) • Water (Add enough to cover chicken) • 1 - Large Onion (Cut into large chunks) • 1/4 - Cup Celery Leaves - Rinsed • 1-2 Celery Stalks (Cut into large chunks) - Rinsed • Salt (Add as much or as little as you desire) • Black Pepper (Add as much or as little as you desire) DUMPLINGS • 2 - Cups All-Purpose Flour • 3 - Tablespoons Shortening • 1/2 Teaspoon Baking Soda • 1/2 Teaspoon Salt • 3/4 - Cup Milk Instructions: • Add cleaned chicken, water, onion, celery, celery leaves, salt and pepper to dutch oven (I used a 7 quart) • Cook on medium/medium low until chicken is tender • Remove chicken, onion, celery and leaves from dutch oven • Cool chicken, then skin, de-bone and cut into pieces (Set aside) DUMPLINGS • Combine dry ingredients • Cut in shortening until you have coarse crumbs • Add milk until flour mixture is moistened (Work just until well blended) • Turn dough out onto floured surface (Knead lightly) • Using rolling pin, roll until 1/4 - 1/2 inch thickness (Make sure surface is well floured) • Cut into desired pieces • Bring broth to a boil • Drop dumplings into boiling broth • Cook dumplings for about 10-15 minutes (Stir gently) • Stir in chicken then heat for about 10-15 more minutes (Broth will thicken during cooking)
I like to add carrots to mine
I learned from my mom to add carrots also. I now usually use homemade chicken stock and smoked chicken leftovers from the weekend.
