My question is why did God respond to the daughters of men being taken with Gen 6:3? If the sons of God took what was forbidden, similar to Eve, why didn't God punish the "sons of God" instead? How does withdrawing his Spirit from man address the issue?
God did. He flooded the Earth and they died. It seems that 'all' of Humanity was 'infected' with the seed of these beings, then after time, even the women were no longer Pure (without genetic purity)...so they had to be stopped from having these (mixed seed generations) GOD had prepared a 'do over'. Noah walked with God because He was righteous (ie: clean)....but, he was not taken by God, for becoming what he did. Just like Moses would lose his temper and lash out at 'The Rock' twice , keeping him from entering The Promised Land, who eventially was taken to Heaven by an Archangel. Just not taken alive by/with God, like Enoch, who so far, even though quite a few "walked with God, they didn't leave with God. It seem that Noah, who also sacrificed much of his life with God, something happened to cause him to eventually die. He also had quite a temper. Remember, Noah and his children, were still 'pure' for a reason I can't go into hear, as it would make this an even longer comment than it is. 🌹

I dont think scripture and historical evidence could be any more clear on the matter. Here is the most important scripture imo: "Jesus is the image of the invisible God, the firstborn of all creation. For by Him all things were created, both in the heavens and on earth, visible and invisible, whether thrones or dominions or rulers or authorities-all things have been created through Him and for Him. He is before all things, and in Him all things hold together." An invisible God chose to create. Jesus is the image of God to creation...this includes angelic beings. The angelic beings that bare His throne are not called "living creature" multiple times to confuse us. Look at the description of throne room. There are elders and living creatures but spirits without bodies made there presence known via a lamp stand. Spirits with out bodies dont have their own food(mana). There is not another story being told...what is being referred to as "aliens" are angelic beings and "powers of the air, spirtual forces of darkness in heavenly places, principalities". When the One who was, is, and is to come returns with mirads of angelic beings...it will be physically seen with physical eyes. I do not negate the fact that "angels" are spiritual beings, but so are we. An invisible God saw that the end result of creation was good and choice to create and creation is now eternal. Look at historical christian paintings, every ancient civilizations testimony to beings from above, impossible ancient architecture, look up at the sky eventually you will see a craft that defies natural physics, and scripture....all testify to the reality of what we are in the middle. IMPORTING IDEAS: This is exactly what YOU are NOT doing Jason. The only ideas you are bringing to the text to interpret it, are the idea already laid down in this book, by its human author (I mention that because the Holy Spirit’s inspiration never seems to get rid of the authors communication patterns and style). Ask yourself this: What were, and what did the fallen third of Heaven do, once the fell from Heaven. Then ask how the women became unpure. Then you'll understand some of why they all were corrupt in God's eyes.
The Sons of God incarnated on earth in human form and sowed their seed as humans. Their spirit body was condensed down to foetus size as occurs with every human birth and then continued to grow back to full size along with the physical body as occurs with every human birth. Their genes contained a blueprint for growth to a much larger size than the normal human body of that time and thus the DNA of giants was spread amongst the human population. John McArthur had a different idea of what happened here. Sons of God being a spiritual being having to possess a person to be in this realm. Therefore it was a mutual agreement between the husband and the wife and the “ son of God”. Causing all to be guilty that were involved. Not sure what I believe yet

Book of enoch and Jubilees go into detail about what happened. They are both referenced and quoted in the Bible so they are definitely worth the read. It appears that they were able to appear to the women. I have a feeling that the women were willing participants. It's very interesting and you end up seeing why God destroyed these wicked people. I'm also not convinced it was just Cains line. I think they infiltrated the whole human race. Cains line might have been the first targeted but they definitely weren't the only ones.
I would argue that perhaps we are created to coexist with the Spirit of God and our flesh. We are indwelled with the Holy Spirit if we believe on Jesus, the Son of God. We invite that spirit in to us and He dwells within us. What else can we invite in us that is spiritual? A person can be possessed by demonic spirits, what is their origin and substance I wonder.

Would like everyone to know, it's a statement saying humans were much taller & stronger before our years were cut. I maintain, that if a human mates with an angel (demon) in human form, then you get a human, albeit possibly one possessed by a demon. Also, why are demons supposedly immaterial now? And why don't we see these hybrids today?
"Birds have one kind of flesh and fish another" If humans can't mate with fish or birds, then presumably spiritual flesh can't mate with material human flesh. Hybridization isn't possible.
I dont think scripture and historical evidence could be any more clear on the matter. Here is the most important scripture imo: "Jesus is the image of the invisible God, the firstborn of all creation. For by Him all things were created, both in the heavens and on earth, visible and invisible, whether thrones or dominions or rulers or authorities-all things have been created through Him and for Him. He is before all things, and in Him all things hold together." An invisible God chose to create. Jesus is the image of God to creation...this includes angelic beings. The angelic beings that bare His throne are not called "living creature" multiple times to confuse us. Look at the description of throne room. There are elders and living creatures but spirits without bodies made there presence known via a lamp stand. Spirits with out bodies dont have their own food(mana). There is not another story being told...what is being referred to as "aliens" are angelic beings and "powers of the air, spirtual forces of darkness in heavenly places, principalities". When the One who was, is, and is to come returns with mirads of angelic beings...it will be physically seen with physical eyes. I do not negate the fact that "angels" are spiritual beings, but so are we. An invisible God saw that the end result of creation was good and choice to create and creation is now eternal. Look at historical christian paintings, every ancient civilizations testimony to beings from above, impossible ancient architecture, look up at the sky eventually you will see a craft that defies natural physics, and scripture....all testify to the reality of what we are in the middle. Ephesians 3: To me, the very least of all saints, this grace was given, to preach to the Gentiles the unfathomable riches of Christ, and to bring to light what is the administration of the mystery which for ages has been hidden in God who created all things; SO THAT the manifold wisdom of God might now be made known through the church to the rulers and the authorities in the heavenly places."

Ask yourself this: What were, and what did the fallen third of Heaven do, once the fell from Heaven. Then ask how the women became unpure. Then you'll understand some of why they all were corrupt in God's eyes.

The Jewish historian Josephus clearly writes that 1st century Jews understood the 'sons of God' in this passage to be angels.
I would argue that perhaps we are created to coexist with the Spirit of God and our flesh. We are indwelled with the Holy Spirit if we believe on Jesus, the Son of God.
