The "champis" (champiñones) in the Motrikes are so good because they have not cleaned the grill since last century! LOL!!!! If you really want a good champi in Bilbao, you have to go to the Bar Arias in San Francisco.
I always thought Pinchos meant literally a pinch of something, and then I found out the original pincho was just a anchovie with a pepper. To be drunk with beer. Then it got more elaborate and now I must have a decent tortilla
