The powdered sugar gets all over... sometimes in your 👃 . But it’s worth it. These amazing melt in your mouth Greek cookie is amazing with no alcohol at all.

A decent attempt, but you made a few mistakes.... 1 - it is only egg yolks, not a full egg... the egg white which has a decent amount of water in it will make the cookies tough rather than short, like they should be. 2 - the butter should not be melted, but at room temp and creamed very well before adding anything else, this adds airiness 3 - these cookies do not require a leavener so the baking soda is not required - 4 - you did not toast the almonds so they will not have any real flavour, just texture. Toasting them makes a big difference to these cookies. 5 - Your use of almond extract isn't very Greek... these are usually flavoured with brandy or ouzo if going the alcohol route and then that is added while making the cookie dough....or they are spritzed with rose water or orange blossom water as soon as they come out of the oven... and 6 - as soon as the cookies come out of the oven, they should be placed on a countertop lined with parchment or wax paper, then liberally sprinkled with icing sugar so that there is sugar under the cookies... and while still hot, have a layer of icing sugar sprinkled over top. This icing sugar melts and dissolves into the cookies adhering to the cookies. Once cooled, THEN they are heavily dusted as well. You should NOT be able to see the cookie for the icing sugar... yours barely had any sugar on them and these cookies need the sweetness from the icing sugar coating as they are NOT very sweet. A Greek cookie without sweetness? Heresy!!! hehehehe...
