I've had a sous vide machine for several years and have really enjoyed it. Probably the best investment I ever made in the kitchen. Also, if you can't taste the difference between grass fed and grain fed, then you are being given grain fed at a premium price. Grass fed beef tastes more like lamb. ALL cattle are grass fed to some extent, eating grass with their mothers as calves. They are then taken to feed lots and fed grain so they can put on that tasty fat. I don't buy grass fed beef for this reason. Grain fed simply tastes better and is much cheaper. If I want the taste and health benefits of grass fed beef, I eat lamb or goat.
It gives you another way to cook something and it tastes great! I tried many grass fed and usually, it is not as fatty. The concern with not grass fed is that gmo corn they eat adding to the glyphosate consumption. I sort of believe it because I was much more sensitive to non grass fed beef when I had an allergic issue last year.
Try the water displacement method. You can put your steak into any old Ziploc bag with the top open and lower into the water steak first to force the air out. Done right it won’t float
I make beef stroganoff and kung pao chicken this way on my multicooker (same as instant pot, just how they call it here in Europe). I don't use the plastic bag, though. Lately I have been buying meat that's frozen and vacuum sealed, then I just sous vide it without spices in the original packaging straight from frozen, then I take it out, mix with the sauce/spices I want, cook a bit longer (or sear it if I want it grilled).
My caution here is heating the original package may leak more plastic particles into your meant than you intend. At least the sous vide plastic bags are rated to that temperature but I think it leaks a trace amount still. Perhaps a silicone bag will be better for you.

My IP is a Duo Evo Plus that I bought on Amazon used, like new and it has been great so far but mine is about 5 degrees off in sous vide with a cheap thermometer. So I’ll look into getting a better thermometer. If it remains that way, I’ll just add 5 degrees going forward. By the way, you don’t need to seal it in sous vide mode. I just put a glass lid for sous vide. Cheers! 😋
My instant pot does not have a sous vide function. However, I'm thinking I could use another setting on it do the trick. Thanks for sharing this video.
I don't think you can because sous vide requires to the degree precision in heat control. All the other functions has no temperature controls. So for a steak, a difference of even 1 degree is noticeable to me and a difference of 10 degrees is medium rare vs medium.

It does look good. I’ve been wondering about the sous vide aspect of the instant pot. I’ve got an Anova and that circulates the water to maintain as much of an even temperature as possible throughout the entire vat of water. An instant pot might be a good option if I don’t feel like getting all the Anova bits and pieces out.
No. The water will cool to less than cooking temps within minutes. If you reheat with non sous vide machinery, it will likely overshoot by a few degrees or more.
There a channel that will teach you how to sous vide without the machine. But it's a work, you need a big cooking container and you have to check every 15mins.

I just close the lid. It's not air tight but there's a insulation mat on top to keep the heat in better.

Don't try to sous vide without a sous vide machine. I tried with a hot pot and the temperature varied about 5 degrees even with constant monitoring.
Its not just the taste, you get a lot better nutritional profile from avoiding GMO corn fed cows.

Instant pot is insulated, so circulating is not nearly as important. Results are the same with less energy consumption.
Heating a plastic big at high temp... not sure if that’s a good idea
Certainly some plastic you don’t want to use for food but nothing bad is released from Ziploc bag plastic under the heat required to sous vide
