I've done the same thing with a pork loin. Roll cut it, slather it in mustard, give it cuban spices, layer ham, swiss and pickles on it, roll it back up, tie it and smoke it for 3-4 hours.

Maybe with Russian/thousand island dressing, or use that for a dip. Then a rye bun? Or add caraway seeds to the sausage? I’d add a sharp Swiss cheese, like Emmental or Gruyère. If making everything fresh, it would take about 5, or more, days.

Wooden cutting boards are a pain to maintain and keep clean, because whatever raw meat or poultry you slice on it, the wood absorbs all of that bacteria and gets so nasty. Also washing wooden boards can be difficult because of what happens when wood has too much moisture in it.

Just made these today I did a little bit smaller casings and a little bit longer for footlong cubano's. I also did my own pickles added crush red pepper And use the Leftovers of a spiral sliced ham. Tomorrow I'll make some buns!

I sauce Bill Dumas make Peach cobbler sausage....which to means you can make any sausage. I wonder if there is a PBJ sausage that wont melt all the goodies out?
