Stuart Liddel, if you read this just know that you are the inspiration for me to return to piping as an adult after over 12 years on hiatus from it. There’s absolutely zero chance I could ever play remotely as perfectly as you do (especially with a pair of tunes such as these), but you constantly remind me to be better and you offer an example of all the movements I could better execute and perform. Honestly, after hearing you play this set, even if it is for the 20th time, I’m embarrassed to attempt playing anything similar in public as I have never played these tunes as flawlessly as you, sir. I likely never will.

Despite the practice I will have to put in, I have been dying to learn these tunes I found some music sheets, but they are not the same as the way they are played in this video, where can I find this sheet music for these versions

Hi Jospeh. Stuart, like other experienced and talented pipers will play their own interpretation of tunes, and some popular tunes will have had their time signatures changed e.g. a march may be reinterpreted as a strathspey, a jig as a hornpipe, a strathspey as a reel etc. My recommendation, if you really like a tune played in a particular way on TH-cam, is to get your practice chanter out, a pencil and some manuscript paper; then click on the TH-cam settings symbol (the 'cog' in the bottom right of the screen), click on 'Playback speed' (choose 0.75, 0.5 or even 0.25) and play along with the performer for a phrase or a bar, then jot it down on paper. This why I often zoom in on the fingers !
