Here’s dealer and 1 player by the book but then you add 2 or more players now you have a different scenario and your in the hands of the other player’s who are playing by their book!

just tried using the Blackjack card online and went from $100 to $400 in just 30 minutes doing the martingale System Started from $2 starting unit only issue was table max bet was $80 i still didnt reach near the max table limit so im happy :D max i got too was a $32 bet
just an fyi, martingale increases the chances that you walk away with a win, but when you lose, you lose more. And it is losing in the long run. I had a friend lose $1300 after losing 8 roulette spins in a row from martingale. make sure to walk away and not do it often!

Your book is wrong. You're supposed to split 8 and aces always. You can't fault the book on every loss saying it failed you. And you're supposed to double hard 11 against 10.
I got 16, since the count is this high, a 2 number difference isn't a big deal, if it was lower than it would be catastrophic. (It could be 18 if I counted wrong, I'm not 100% at counting yet).

I feel like these dudes just get really lucky at the casino and are blaming the book for it.

No, perfect basic strategy will give the casino about a 0.5% edge. So long term you BARELY lose. So this is accurate because there is alot of variance in blackjack, up days and down days. This happens to be an up day.

card counting also tells you when to increase or decrease your bet, since it changes your odds of getting a black jack

Few errors not by the book. As a blackjack dealer I can tell you this is rarely the outcome of a single shoe with basic strategy.
