Clean organs out and freeze as quickly as you can when you catch them, pick them out, cook thoroughly or freeze down to appropriate temp and duration if eating raw! You can get small super freezer to use at home to prepare your own sushi/sashimi, I use tuna and salmon from the Oregon coast!!!

While thats true you should do some research on the living conditions of farmed salmon. Their meat is also grey before coloring
