Yes, an instapot works great. Boil for 6 minutes, drain and run cold water over the rice to stop the cooking and let dry 10 minutes in a strainer, then jar up and put in the instapot under pressure for 30 minutes, pull out and let cool then inoculate... Since you are using rice for human consumption, it doesn't have the endospores to worry about, therefore no need for 90+ minutes of pressure cooking... How long did you cook the rice before straining? And, the vinegar goes in the pressure cooker with the 3 quarts of water... a couple of table spoons or a cup?

You’re looking for a slight crunch still to be in the center but still being able to pinch it between two finger nails. For vinegar, just a small splash as per prestos instruction guide. I believe it said 1 tbsp?
Have you tried letting the rice steam off the rice once it's out of the water. And toss it around to get all excess water off. It can help with having too much water and prevent dry rot. Make sure you do this befor the pressure cooker and still rince it off.
Well given that I cool my rice I can’t really let it steam off after the fact, but it would be a way to do it. I shake mine in the strainer for 5 mins before I jar it up to get excess water out. Haven’t had any issues yet!

Pgt refers to broke boi tek as such, 90 sec Mycology has his own version called lazy boy brown rice tek or just brown rice tek. Sticking to one persons terminology is already hard to do in this space, I believe that this 90 sec rice tek was originally referred to as spider-man tek even, like 4 years ago+. If you think I should change the name of the video, what should I name it? I’m genuinely asking

Instapot PSI is only a max of 12...so cook longer than pressure cooker times

Uncle Ben tek is something completely different . Uncle Ben tek is something using 90sec Uncle Ben ready made rice to use as your grains.
