My grandfather in Mississippi had "pick your own" greens, peas, okra, melons and other things. I`m planting 20 fig and dwarf mulberry trees this year but with the goal of having enough trees for the birds and I and for cuttings to root and leave for free at a small rural church food pantry dropoff for poor people. Many can`t afford fruit trees or need encouragement to get any planted. I think it`s very important going forward to distribute food forest plants for the future because things are going downhill.
I am looking to start a Hub. I really think it is the way to go for us. I cannot be standing at the farmer’s market every Saturdays since it is my main time to work the garden. I also want to help homesteaders that really do not have the volume to start their own. It is harder to get consistency but I think it is a good way to help others get a revenue from their farm.
There are a lot of producers in my area, so competition at the farmers market is keen and not what I'm interested in after a long career dealing with clients in another setting. I upsell my produce with a soup and canned fermented vegetables CSA, which doesn't require that my vegetables look perfect (because I chop them up). They're also shelf or freezer stable, so if they don't sell in a particular week I have them for another week. It does require that I rent a local commercial kitchen for several hours month. This allows me to market garden and to cook, two passions. And it prolongs my season to year round. Folks eat less soup in the summer when I'm busy in the garden, but over the colder months they love the soup. I can freeze produce and use it later in soup. I'm thinking of pairing with a local baker to add bread to the CSA, since it goes so well with soup. I'd like to also add winter greens, so a soup/salad/bread CSA.

Avoid market saturation areas. I didn't have a single veggie leftover after todays market because demand is exceeding supply. Lettuce king.
