Sauerkraut is lovely when you add carrots to the cabbage. Another version I make is 50:50 red cabbage to white or green cabbage, with carrots. I never make It with the white or green cabbage alone. Also try making Kimchi with your vegetables. Kimchi is fermented vegetables, but traditionally cabbage based.
