Definitely chewy, everyone else I know likes it crispy, I thought I was all alone. I appreciate you sharing your life with us. I found you when I got Dx with GP last Oct. It was through your posts that I have learned about POTS before that I have never even heard of it, I just got diagnosed with that as well just a couple of days ago, thanks to you at least I'm somewhat familiar with it. I really enjoy watching whatever content that you share. Thanks!
No, you’re not being overly complicated in your cooking techniques- you are using excellent techniques that make a difference. Yes, ALWAYS prep your dry and wet ingredients separately. Yes, ALWAYS sift dry ingredients - you will get an even more blended dry mixture if you sift all the dry ingredients together at once. And yes, yes, try never to put melted butter into very cold liquids. You are doing just fine, and i am very impressed with your good understanding of cooking methods.

I love adding a dash of cinnamon to my batter! It gives it a little bit of flavor without being overwhelming. And yesssssss loads of vanilla!

Your pancake recipe is very similar to the one my grandma made! I made it up until I had to practically eliminate gluten, but my mom still makes it. The only difference between yours and ours is the vanilla and we use vegetable shortening instead of butter. My grandma used buttermilk instead of regular milk. I still remember eating those as a kid!

Lol Jac, you need to get a real sifter,give that a try as your flour and pancakes will be even more fluffy and soft!!I I too used the same kind of strainer as you, it was really doing nothing for my flour. The I get a “real” sifter....Omgoodness what a difference! Don’t mean to offend anyone!

I like combination bacon! I love when some parts are crispy and some parts are chewy. I would say 70% crispy and 30% chewy is the perfect slice of bacon! Haha

Yes Jaquie! I'm with you the chocolate chips go on top of the pancakes after it just starts to bubble slightly. NO sugar on grits! Butter or cheese.

Since you have to wait for the milk/butter to cool down anyways, have you ever thought to do that part first and then mix your dry ingredients while you're waiting for it to cool?

I love grits!! My moms tribe (she’s Native American) is where grits come from. One of the ways she makes grits is with butter, cheese, jalapeños, and grilled shrimp. It’s amazing! You guys should definitely try it. I’m not sure if you can have the jalapeños but I think I remember Jud liking spicy things.

I also like my bacon cooked in between! I love it too, but unfortunately with my stomach issues, I can't eat it either. :( When I saw you measure the milk, I thought it was awesome that I'm not the only one who does it that way. I'm not good with fractions at all. I've seen lately, some measuring cups that have all the measurements on them! I bought one and it helps! LoL

I love this video and seeing how much fun you guys are having! I am definitely between crispy and chewy. I like the edges like a really good cookie being that the edges have a little bit of crisp and the inside is cooked but still soft and chewy. And I've never had grits so idk how to even eat them because so many people eat them differently. Everyone I've asked either say grits are really really good or they are nasty never an in between opinion of them. I've heard they are best with butter or best with just salt and pepper or butter and salt or sugar or brown sugar or cheese but I've heard that they aren't like the texture of cream of wheat even though it looks the same so I'm scared to even try them lol. How would you explain grits to someone who has never had them before?
Chewy when it's not on a sandwich. I'm really careful with the sodium in foods so chewy I can only have a piece or two and still enjoy. I love how happy Judd makes you "better together".

I love brown sugar in my grits. Can’t get grits where I am in Canada. Got them in Missouri! Yum. I like crispy bacon though like you I have GP and my body can’t handle it. Happy gastroparesis awareness month!

My dog brings me his toys before he will do a task. Lol He only works at home. I do have another in training and he is not ready to do these task yet, but he watches Dizzy and learns from watching. We always make chocolate chip pancakes and my hubby puts the chips in just like you. Lol Crispy bacon, but not burnt...a little chewy.
Super crispy bacon not burned though. I am not allowed to cook bacon because I overcook it according to my family, lol, they like is chewy with crispy spots.. Love grits, cheesy grits with eggs and bacon or sausage is yummy. I also really like shrimp and grits. Your pancakes look really yummy. I don't think you have unnecessary steps. I cannot stand when recipes use odd measurements and then you have to figure out how to measure that amount.

Question -- what are grits? I am Canadian and always wondered. I like crispy bacon and blueberries in my pancakes.
frances D Hi Frances...well they are mashed up & ground corn they tell me but I think it's more the texture of rice but anyway...I like mine with salt & butter. 😀 You can get them pre-packaged & just microwave it or like in a container like fresh oatmeal and that way you boil it. Hope that helped a little. 😀

Crispy chewy bacon. A trick I learned is to add a little water, therefore as it Cooks it evaporates the water and you get crispy chewy bacon.

I did not even know what grits were until I moved here in 2014 and saw grits at a restaurant thinking it was cream of wheat.. boy was i wrong.. i put milk, sugar, and berries in grits

Crispy bacon all the way... When I go to the Waffle House all the Servers know I need my bacon XX crispy. And I'll have to try your pancake recipe as I've been making my own recipe for over 30 years. As for grits and eggs, I added cooked Sage sausage and mozzarella cheese in my eggs this morning..... Yummy.
I don't remember the last time I only bought 6 eggs. Normally I buy 18 or 36 at a time.
