Mav, A couple of things on cast iron and Dutch ovens: Cast iron is great because of its tremendous ability to retain heat. Thus, once it is hot, it is hard to cool it down. Start super cautious and bring the temp up slowly. When using the dutch oven lid, get a metal rod with a crook and also a hot glove. Those things are always messy but also dangerously hot. Be careful man. Finally, there are some times when having a super hot piece of metal is awesome: steak, hamburgers, pizza. Also on the opposite end, get it hot then remove it from the fire to do a slow cook like a stew. use only the coals on the lid to keep the simmer going. Good Luck.

When doing charcoal, rule of thumb- 1/3 on bottom, 2/3 on lid. Turn your lid several times and turn the pot half way through. Also great for baking bread...
Dutch oven enchilada PRO TIP! Instead of rolling each enchilada, try layering like a lasagne! Tortilla, chicken, beans, sauce, cheese. Two or three layers and cook! AMAZEBALLS!!!

Must remember, cast iron always remains their heat longer than any other cookware. You don't have to cook on a flame until done, take it off the flame a little early and the cast iron will keep doing the cooking for you. One thing I do love about cast iron cookware is that it will last longer than you and also after use it creates a non stick surface better than any other cookware out there. Just don't clean it all the time with detergents and dawn soap, that takes away from the non stick surface you create. Best to wipe out an oily pan with a paper towel and store your cast iron away for another day. It's always best to have a little remaining oil in your cast iron.
...and no one has mentioned "seasoning" the cast iron, which...if not "on the road" as Mav is..can be done with grapeseed oil...wipe on/wipe off...place in very warm oven...for 30-45 mins....remove...let cool down ...store.. use again....remove food..burn off what's left quickly...cool for 25 mins...wipe on/wipe off...g s oil...repeat above procedure about 4-5 uses, until cast iron has "built in" sheen....which when done properly leaves you with a professional cast iron cook's go to cookware...be it Dutch oven, frying pan, sauce pot...or other! You've done good for "on the road again" Mav....Happy trails!
At subway, when I was a truck driver, I had them cut the footlong in 3 and wrap them separately. Easier to eat and handle while driving. All I use while camping is a Dutch oven, cast iron frying pan with lid...I love to cook and can do anything. And a small BBQ grill for everything else.
I used these a lot in scouts what really helps is to evenly space out the coals on the top and bottom and also adding a later of foil on the Dutch oven when cooking allows for easy cleaning. If you space the coals out evenly you dont need to rotate the lid. Good luck

Try seasoning the dutch oven a couple times with oil and fire and you will form a nonstick coating and it will probably burn less on the bottom. Also season everytime after you use it to maintain a good coating. :)

This is very inspiring. Not much of a outdoorsman. I hate camping and not being able to shower everyday. However, as I get older, I can take it and enjoy being outside more and more. I appreciate the sun rise and sun set more as I automatically wake up early. I love cooking in unconventional ways so that part of camping, I love. Mav has earned my subscription.

Mav you are doing a fine job with that oven for the first go, just season it well and keep it oiled, when you cook try to have less coals on the bottom where the food is in direct contact and more on top, great vids keep it up

I remember Dutch oven cooking a lot growing up. If I remember correctly each charcoal gives off about 25 degrees of heat. So a cooking time that wanted 350 degrees would be 14 charcoal. Now if its really cold or really windy adjust with another charcoal or two. Love these videos Mav!

@@buddah8706 you can just use soap. Modern soaps don’t have lye which is what removes the seasoning, but people still say not to use soap. I only cook with my cast iron and use soap after every use. It doesn’t take the seasoning off, they are as non stick as non stick pans I used to use
@@ItzzTesta soap rrmoves the oils that keep the pan from rusting and is part of the season on the pan. Will it hurt to use soap, probably not, is it better not to use soap? Yes, yes it is. Wipe with a paper towel and oil. Tinfoil will clean it up real good, add a bot of salt for grit if you need it.
those enchiladas looks great, we do alot of dutch oven cooking while we camp. Couple tips are to just take some coals out of the fire and set away, usually only 5-6 hot coals for the bottom 4-6 on top, otherwise you get the sides way too hot. and a traditional dutch baby is lemon juice and powdered sugar (not a fan)

Greetings from Utah. Yes, we love Dutch oven cooking. If you don’t buy a Dutch oven handle, a claw hammer works. I also recommend an aluminum Dutch oven for desserts!
I was just thinking, that if you put your cast iron skillet under the Dutch oven, you'd get double protection under - so the bottom won't get charred. Trekking in the Himalayas, we used slate flat stones. They worked well, too.

A couple dutch oven tips: get some big tongs and thick gloves to move the lid and move coles around. And i use a foil dutch oven liner so I don’t have to use oil or clean the oven.

Just a tip when using a Dutch oven is that you should only put 2 or 3 coals under it and place a circle around the edge about a inch away from the oven, then the coals on top. Especially when backing something. Take it from a Dutch fan from South Africa. "Keep on trucking".

A couple dutch oven tips: get some big tongs and thick gloves to move the lid and move coles around. And i use a foil dutch oven liner so I don’t have to use oil or clean the oven.
I use the parchment paper liners, they’re cheaper and fold up compactly in a small box
Big recommend to Cowboy Kent Rollins, the dude is the master of cooking with the dutch oven

Hot tip: line your Dutch oven with foil (both lid and main) before cooking and for easy clean up.
Dutch oven grabbed my attention right away! That's the only way to cook (& Weber BBQ's my husband adds) as far as I'm concerned. I am the queen of cast iron cooking in our family!

Just a tip when using a Dutch oven is that you should only put 2 or 3 coals under it and place a circle around the edge about a inch away from the oven, then the coals on top. Especially when backing something. Take it from a Dutch fan from South Africa. "Keep on trucking".
