I notice your gooseneck is about 24-36" back from original position putting the lower spar and sail almost flat and in center of the boat. The boat is staying flat (no heel) in those winds.
I pretty much just set the boom height for where I could get under...so not much thought went into it in terms of sail shape! That's a very interesting observation! I don't have all that much sunfish sailing experience so I'd love to hear more from you or anyone with more sunfish knowledge!

Heavy wind.....more sail rake forward, and lower your sail. Boat will be more stable
A main sheet block with a cleat gives you a "free hand" when sailing... That's what I would have on my boat.
A cleat would be handy!
