    You guys really need to make the secret ingredient secret for the food critic until after the critic has tried the food, and give them an actual layer of mystery during the tasting. "We made this 3 course meal for you around a single mystery ingredient that we got from the dollar store, can you guess what it is?", something like that.

      @@LeonardGreenpaw He was estranged from his mother, who later took her own life. His father died while he was in college. The facts he’s dropped up until now seem to suggest he grew up in poverty and being subjected to emotional abuse at least by his mother who was mentally ill. Seems like neither of his parents were really fit to raise children and he suffered for it.

    honestly, Rhett and Link could open a restaurant called Mythical Kitchen and have josh and the crew come up with the menu and i bet that place would stay packed (or get a lot of doordash orders because pandemic lol) also I can no longer ever imagine GMM cooking without Josh anymore. He's became basically the face of their cooking madness and i love him

    Memo is absolutely brutally honest with this review. I felt second-hand shame just from how badly he reviewed the first dish and Josh took it in stride so well.

    The thing I like about this channel and Josh as a cook is that unconventiality. The fact that pretty much everything that Josh creates is entirely unconventional and new and on the edge of culinary experimentation. I don't think that fact that he had one hard miss is anything to be ashamed of at all considering just how crazy and theoretical everything he made was. Wouldn't be surpised if Josh legitimately comes up with some culinary innovation some day that actually becomes widespread thing in fine dining.

      He made a version of them with a Brazilian meat dish, I can't remember the name. If you look up "soup dumplings" you could probably find it!

    A lot of people think that the fresher the fish is the better it is, which is not true. If you age the fish for a little bit it will become more tender and develops flavor. Something like inosinic acid that adds umami to it. I had sushi at Jiro's son's restaurant in Tokyo, he explained that they age their tuna around 10 days before it's served. It was amazing.

    I absolutely agree with what Memo is saying about tacos. It's just one of those foods that can range so widely in complexity, and yet even the simplest of them can impart so much flavor. Very glad that Josh nailed that one. In all of his shenanigans, it shows that there is still a real chef underneath.

    OMG. Josh was asked for a taco and makes flan with Doritos. It's like the chaos nightmare episode of _Chopped._ He actually said "Nicole: _[laughs in Culinary School]_ " _Allons-y!_
    In serious, the flan might have been good without the trout roe. Like a polenta or set corn porridge with Dorito cheesiness.

    I like how honest Memo is :) Food should leave you with a memory, a story to tell. My family is very food oriented and we celebrate food as much as we celebrate a holiday. I guess growing up poor and still living well below the poverty line, food is magical :)

    For the Doritos I'd do a Doritos "cheese cake/pie/quiche".... Doritos base (instead of gram crackers), ground beef and refried beans spiced with taco seasoning, queso fresco, grated carrot, roasted tomato slices, mozzarella cheese melted and guacamole topped with chargrilled corn.

    The Doritos flan is a great idea. But it’s too thick. Make it half as thick. Top it with a somewhat plain white gravy with black pepper, and a pinch of cayenne, so as not to overwhelm the delicate corn flavor. Dice some chicken thigh meat and put it in the gravy. Then borrow several other delicate flavors from Caprese. Top the gravy with a basil Chiffonade, and arrange two or three thin slices each of heirloom tomatoes and fresh mozzarella. Dust it with Italian breadcrumbs.

    One of my favorite suppers my mum made when I was a kid was chicken battered in sour cream and crushed Cheez-Its. I think it'd be amazing with Doritos.
