A freeze dryer freezes and then sublimates all of the water particle in a substance. Since vegetable oil does not contain water (as far as I know) it most likely would not do anything, though it'd be cool to do and see anyway, because I'm just making an educated guess
maybe you should try freeze drying smoothies or sodas or some type of drink to see if it puffs up too! It might not work but yea just an idea! Also maybe you could try freeze-drying boba balls!

You should freeze dry fruit like the ones with the most moisture then see the difference in taste from freeze dry and regular.
I think the freeze dried mentos had more reaction due to an increase in the surface area of the shell from the cracks.
