Your instructor is picking a good riding line, you should be looking right at his tracks. And standing up makes everything easier.

After all that training you get through I believe you can easily try on polish TET. It's a mix of sand,mud and gravel which is nothing you didn't face before. Well done you and glad to see you enjoying off-road 💪
Keep on trucking Saffy. One salient point that is often missed is the screen on your bike. When it is baking hot and you move at slower speed you are not getting the advantage of the breeze by forward momentum, as your riding partner does on his enduro bike without that wind protection. We have all had those days on the road when we are cooking, all geared up, but as soon as we get moving all is good. Same concept only amplified in the dirt and in the valleys at lower speed on hot days.
The secret to riding is "don't eat crumble cake" before the ride. Don't be susceptible to "negative" thoughts. Take care and have a fun week ahead Saffy.

Hmm, I had some similar issues in the French alps….last week…concentrating instead of breathing after a seven year gap since I last skied! At 9000 ft! Apparently, O2 levels there are 4% lower due to low air pressure; effectively a 20% reduction in available oxygen to the lungs. Yet again; same thing; pause if you’re struggling, but maintain pace and momentum. Too slow and you’re on your side. Still I suspect riding in the heat of the desert is worse. Thanks for being our Guinea pig!!!!😮
For hot conditions maybe look at DIY cool-packs made with a salt-based phase change material - there's a recipe around thst changes state at 18c which should work much better for direct cooling than, say, an ice pack.
Good effort that. Keep at it, it’ll come together with experience. Do some proper slow speed manoeuvring on a flat, open space, working on clutch/brake/throttle control/balance & body positioning. A session or 2 at somewhere like BUMPY, Trials Day or Inch Perfect will definitely help. Cracking video too.
When I checked, Saffy’s bike is about 50kg heavier than the bike I’m on which is a Gas Gas EC 350 so what Saffy achieved is amazing. Even I struggled with the weight when I rode Saffy’s bike.

As a non biker I wondered whether it would make a useful difference to the centre of gravity if the fuel is stored lower down eg in the frame. Liquid is heavy - 1l=1Kg / 1g=6lb. 🤔
Potentially but having a lower down fuel tank poses significant safety concerns. You usually put a bash plate on an off-road bike because rocks and stones rip under your bike a lot, if you swapped the tank around, you'd also risk it rupturing and spilling more than it's current placement. Having the tank higher up provides way more protection :) consumption wise it might be better but you wouldn't get very far when it splits
When you're used to stability on the road, it's hard to adjust to loose feel under the tyres I dropped my bike in Portugal due to dehydration, and the type of riding your doing seems more demanding, when you get back to the UK I recommend some endurance training
Oh my god! I swear! I've seen videos of professional racers cruising on sand and never would I have imagined how hard it is! It's like watching the Olympics and not fully understanding just how fast they run! Riding in the heat is good dayum hard work!

Breathe the best way you can breathe. When you sprint flat out running, how do you breathe? Breathe that way when you are riding hard technical stuff. The idea that everyone should breathe the same way is nonsense.
I think you need to fuck about on the bike more.. imagine a teen on a stolen dirtbike, absolutely no fucks given, wheelies, driving through council estate past police, riding like a boss.. i think the pressure of a nice bike, the youtubes, the fear out in the wild etc, is stopping you from doing the absolute best thing you can do... piss about.. ride it like you stole it. find a small circuit or route and perfect riding something repeatable. Thats why its called practice..

im guessing not met you before and don't watch you on youtube? he should train you differently your no where near good enough to be started like that, I've been instructed people for 20 years he should start with you doing basics first of first gear only how to do it as slow as possible and balance also over items like logs off the throttle etc etc that would give you huge more confidence if you can easily pop the front end up over logs etc etc and ballence everything else will be a loads a lot easier.

The heat was so hard! Throw in some post-broken rib decreased lung capacity as well! Thought I had asthma!
